Traditional Georgian soup kharcho is a spicy, hearty and very fragrant soup. It is cooked with any meat, and sometimes even without it, a variety of spices and cereals are added. But all these are derivatives of the Georgian recipe, which, of course, is different in every family.

Kharcho with beef
Ingredients:
Beef – 1 kg; Salt – 3 tsp; Olive oil – 4 tbsp. l .; One medium onion; Two stalks of celery; 4 cups of beef broth; 4 cups of water; Tomatoes – 800 gr; 2 bay leaves; 1 teaspoon of ground coriander seeds; 1 teaspoon of smoked paprika; 2 cloves of minced garlic; Half a cup of raw white rice; Lemon zest – 2 tbsp. l.; Parsley, dill.
Cut the beef into small pieces, sprinkle with three teaspoons of salt and toss to combine. Heat a large saucepan over medium heat and heat two tablespoons of olive oil or other vegetable oil. Fry the beef and take it out.
In the same oil, fry finely chopped onion and finely chopped, or even grated celery, fry, stirring for about five minutes until soft.
Add finely chopped tomatoes, four cups of beef broth, four cups of water, two bay leaves, and browned beef. Bring to a boil, then reduce the heat, cover and simmer over low heat for about two hours until the meat is tender.
Add rice, two tablespoons lemon zest, two minced garlic cloves, one teaspoon coriander, one teaspoon paprika. And cook for another twenty minutes until the rice is ready.
Remove from heat and add parsley and dill. There must be many. Season with salt and pepper.
