Turkish delight is a sweet, common in Eastern countries, which is soft, translucent, sugar-starch cubes, sprinkled with powdered sugar or coconut flakes. Nuts are often added to make the taste more interesting. In Ukraine, this confectionery enjoys well-deserved love, and you can easily cook it at home. Homemade Turkish Delight
Ingredients:
pomegranate – 2 pcs; sugar – 350 gr; water – 150 ml; lemon juice – 1 tbsp. l; corn starch – 70 gr; hazelnuts or pistachios – 75 gr; coconut or powdered sugar.
Instead of pomegranate, you can use any other fruit juice to make Turkish delight.
Cooking method:
Peel the pomegranates, select the seeds, place them in a blender, beat and strain the resulting mass through a sieve to get rid of the seeds. If the juice is less than 350 ml, add this amount of water.
For sugar syrup, in a separate bowl, mix sugar, water and lemon juice. Mix everything, bring to a boil and cook, stirring, for about 10 minutes, until the temperature is 130 degrees. After that, remove the mass from the fire.
Add starch to pomegranate juice and mix well so that there are no lumps. Put everything on medium heat, cook until the juice thickens, remove from the stove. In the resulting mass, add sugar syrup in three approaches, each time thoroughly mixing everything. After that, send the pan back to a small fire and, stirring constantly, cook until thickened.
Add roasted nuts to the mass and boil a little more until Turkish delight becomes even thicker.
Remove the mass from the heat and transfer to a mold greased with water. Smooth everything and cover with cling film in contact, send for two hours in the refrigerator. Then put the Turkish delight on a flat surface, sprinkle with powdered sugar or coconut flakes on all sides and cut into pieces. Keep Turkish delight in a closed container.
