Homemade Caesar salad
Ingredients (for 4 servings):
lettuce leaves – 2 bunches; chicken fillet – 2 pcs; oil – 3-4 tbsp; cherry tomatoes – 8 pcs; quail eggs – 10 pcs; parmesan cheese, croutons – optional.
For refueling:
seasoning for Caesar salad – 1 pack; mayonnaise – 5 tbsp. l; Greek or natural yogurt – 3 tbsp. l; salt, pepper, Provencal herbs – to taste, vegetable oil in which the chicken was fried.
Cooking method:
Boil quail eggs in boiling water for 5 minutes. Wash the chicken fillet, dry it with a paper towel, rub with salt, pepper and seasonings, leave for a while in the refrigerator to marinate. Wash lettuce leaves and leave to dry.
Next, heat the vegetable oil in a frying pan, put the chicken fillet and fry on both sides until golden brown over medium heat. Put the finished meat on foil, wrap tightly and leave for 20 minutes.
In the meantime, we’re filling up. Put mayonnaise, yogurt, spices, salad dressing into a deep bowl, pour in the oil in which the chicken was fried, as well as the juice from the fillet, which has collected in foil. Mix everything until smooth. The sauce should be a little thin. If it turned out to be thick, you need to add a spoon or two of boiled water to it.
The last stage is the design of the salad. Tear the lettuce leaves into pieces, add a third of the sauce, mix lightly so that all the greens are soaked. Put the leaves on serving plates, put the chopped chicken fillet, halved quail eggs cut in half, sliced \u200b\u200band tomatoes into four parts. Pour remaining sauce over each serving. Sprinkle with grated Parmesan if desired. Lay out the crackers.
