Now the pumpkin is in trend, besides it is a very healthy and tasty vegetable.
Literally everything can be prepared from pumpkin: from soup to dessert. And it is this casserole with cottage cheese that turns out to be very tasty. It reminds both an American pumpkin pie and the famous Lviv cheesecake.
And it’s very easy to cook it. The recipe was shared by food blogger and chef from Ukraine Valentina Saenko.
Low-fat cottage cheese – 500 gr Sugar – 80 gr; Two eggs; Corn starch – 20 gr; Raisins or dried cranberries – 50 gr; Vanilla.
For the pumpkin layer:
Pumpkin puree – 250 gr; One egg; Sugar – 50 gr; Corn starch – 20 gr.
For chocolate glaze:
Black chocolate – 100 gr; Cream – 30 gr; Butter – 50 gr.
Peel the pumpkin, cut into large pieces, sprinkle with cinnamon, dried ginger and bake in the oven, heated to 180 degrees, until it becomes soft. The quickest way to cook a pumpkin is on a baking sheet. After cooling it a little and smash it with a blender in mashed potatoes.
Mix cottage cheese with sugar, two eggs and vanilla, or vanilla sugar. Beat with a blender into a homogeneous mass, stir in the raisins and starch.
Beat one egg into the pumpkin puree and add sugar and mix.
Line a cake pan with parchment paper and lay out the curd mass and pumpkin puree alternately, without mixing. Then in the context of the casserole will turn out bright and beautiful.
Bake in an oven preheated to 180 degrees for about an hour. Or a little more, focus on your oven. Then take out and cool in the form. In principle, the casserole is already ready. But you can add chocolate icing to it to make it even tastier.
Melt the chocolate in a water bath, add the cream and butter, mix with a whisk and pour over the glaze over the casserole. It will be ready when the frosting has set.
Pumpkin can also be used to make delicious Italian pumpkin donuts. They turn out fluffy, tasty and very bright.
