Broccoli cutlets
Ingredients:
Frozen or fresh broccoli – 450 gr; Two cloves of garlic; Hard cheese – 100 gr; Two eggs; Flour – 4 tbsp. l.; Dill, vegetable oil, sour cream, salt, ground black pepper.
First prepare the broccoli. If it is frozen, then let it thaw, and then boil it in boiling water for just a couple of minutes after the water boils again.
If your broccoli is fresh, then boil it in salted water for literally three minutes, and then douse it with ice water so that it retains its color. Grind cabbage in a blender.
Pass the garlic through a press, grate hard cheese on a medium grater. Whisk the eggs and add to the broccoli crumbs. Stir. Stir in the grated cheese, flour and half the garlic.
Heat the vegetable oil and spread the cutlets with a tablespoon. Fry until golden brown on both sides.
Sour cream sauce is perfect for these cutlets. You can also replace sour cream with unsweetened yogurt like Greek. Just add crushed garlic, chopped dill and salt to the yogurt. The same sauce is great for homemade shawarma, or any other dish of your choice.
Also, vegetable cutlets can be prepared from ordinary white cabbage. This will turn out to be a lean dish, which is very important for those who fast, or a vegetarian diet.
