Prepare the minced meat. If you have lean pork, add a little lard. The minced meat should be cold, so before you start cooking, put it in the refrigerator for half an hour.
Chop the onion as finely as possible and add to the minced meat.
Grind the onion crackers into crumbs in a mortar and also add to the minced meat.
Pour cold milk into the minced meat, add salt and spices to taste.
Whisk the egg in a small bowl with a fork until the yolk breaks down. Add to the minced meat and knead well.
Divide the minced meat into 4 parts, form balls, then shape them into pucks about 2 cm thick.
Heat a frying pan with a small amount of vegetable oil. Fry the cutlets for 4 minutes on each side until golden brown.
Cover the pan with a lid, reduce heat to low and cook for another 4-5 minutes until the cutlets are well cooked inside.
You can also bring the cutlets to readiness by placing them in a hot oven for 7 minutes or in a double boiler for 10 minutes.
